Jam turn ricely chewy when baked. We’ve

Ingredients
125 g butter at room temperature
180 g caster sugar
1 egg
150 g self rising flour
75 g plain flour
30 g corn flour
2.1 raspberry jam approximately
Preparation
1. Preheat
the oven to 180 c
2. Line
to baking trays with baking paper. Using electric beaters, beat the butter and
sugar in a bowl until light and creamy
3. Add
the egg and beat until well combined
4. Sift
the flours and corn flour over the mixture, the stir in using a large metal
spoon until well combined. Roll teaspoons of the mixture into balls and place
on the baking trays.
5. Using
your thumbs, make a small indentations in the centre of each biscuit, then
spoon about1/4 teaspoon of jam into each dent. Bake for 12-15 minutes or until
light golden brown.
6. Transfer
to a wire rack to cool, then store in airtight containers. Instead of topping
the biscuits with jam. You can use a small items of confectionary, such as a
“freckle” or “smartie” or brush them with egg white before baking and sprinkle
them with hundreds and thousands. If your biscuits become soft, heat them in a
moderately low oven for a few minute and they’ll be as good as new.
